We use a specially made wrapper that’s slightly thicker and delightfully chewy.
Its thickness allows it to gently hold the filling, creating a perfect texture: crispy on the outside, soft and chewy on the inside.

We use a perfect balance of lean meat and fat to bring out a rich, juicy flavor, while the cabbage is cut just right to maintain its crisp texture.
In addition to our classic pork gyoza, we also recommend our original Chicken Gyoza, made mainly with tender chicken thigh, and our Vegetable Gyoza, made with only tofu and vegetables—a great option for vegetarians and exclusive to the Kiyamachi branch.

By folding in just the right amount of air, each dumpling gently wraps the filling —creating a light, delicate texture with every bite.
To prevent excess moisture from escaping the vegetables, we rest the filling for only a short time before freezing it.
By using it all within the same day, we lock in the flavor and ensure every bite is always fresh and delicious.
